Here are 2021’s top newcomers to the Top 100

The Restaurant Business Top 100 ranking of the country’s largest independent restaurants returns after a pandemic-induced hiatus in 2021.

Unsurprisingly, an absence like that results in a higher-than-usual number of newcomers to the ranking. And that includes one debut that is particularly high on the list. Here are this year’s Top 100 newcomers.

Mila (No. 5)

The Miami Beach hotspot generated $27.4 million in sales in 2021. The restaurant serves a combination of Mediterranean and Asian cuisine and features a rooftop bar.

Maple & Ash (No. 12)

The Scottsdale, Ariz., outpost of the historic Chicago restaurant had sales of $23.5 million last year.

Papi Steak (No. 18)

Another Miami Beach hot spot did $22 million last year. It is known for its $1,000 steak presented to customers in a rhinestone-studded briefcase.

Pastis (No. 30)

This revived restaurant in New York City is in a new location and offers bistro fare. It did $19.7 million in sales last year.

Old Mill Restaurant (No. 48)

The Pigeon Forge, Tenn., restaurant is a high-volume location that generated $16.7 million serving Southern classics in a 200-year-old gristmill.

Bar Siena (No. 74)

This Chicago restaurant did $13.75 million featuring a menu of Italian street food and pizza.

The Hampton Social (No. 75)

This Nashville restaurant generated $13.4 million in sales last year, featuring seafood and beach-themed cocktails.

Bistro 31 (No. 86)

This European-style café in Dallas serves French, Italian and Spanish flavors and did $12.3 million in revenue last year.

The Spot (No. 92)

This beachside restaurant in Galveston, Texas, features amazing views of the gulf along with burgers and wings. It did $11.7 million in sales last year.

Steak 954 (No. 93)

The oceanfront restaurant features premium steaks at the W Hotel in Fort Lauderdale. Sales last year were $11.5 million.

El Vez Philadelphia (No. 95)

El Vez is a trendy Mexican eatery serving cocktails and upscale cuisine. It did $11.5 million in sales last year.

Toulouse Café & Bar Houston (No. 98)

Toulouse is a stylish café with outdoor seating that serves French classics and cocktails in Houston. It did $11.1 million last year.
