Conor VanBuskirk, an original partner in St.Louis-based Beets & Bones, is rebranding the restaurant at 8401 Maryland Ave., as Manifest Juice and Broth.
His partner, Katy Fry, will serve as COO, while VanBuskirk, who also owns Upshot coffee, will take on the role of CEO.
“We want to take the best parts of Beets and Bones — the juice and broth — and simplify the concept,” VanBuskirk said in a company press release. “Our goal is to make it seamless, pleasant, and enjoyable to quickly purchase what you came in for.”
The restaurant venture will focus on crafted juice — bottled in glass — as well as broth. Additional menu items include toasts, salads and pastries available for indoor and outdoor dining, as well as carryout. While the coffee program will be smaller than it was at Beets & Bones, one blend black coffee on drip will be featured at a time. A retail section with grab-and-go meals and locally sourced protein from nearby farms will round out the offerings, and weekly juice and broth subscriptions will be available in the coming months.
The space opens Monday with a refresh featuring a softer color palette and an abundance of plant life, both as decorations and also in the form of edible botanicals and flowers, and herbs, to be used in the food and beverage program.
“We’re all about manifesting lifestyle change and empowering our patrons to find optimal health,” Fry said in the release. “Our main goal is to impact the community in positive ways from immersing guests in a botanical experience to relying on local farmers, producers and artists.”
